The BEST CrepeCakes You'll Ever Eat

You know how when you're in the kitchen and you bake something but you mess everything and end up with something completely different and inedible? Yeah, I can more than relate.

This morning, I was supposed to be making waffles, but that got ruined, so I resolved to making pancakes, which turned out looking like a crepe more than I intended it to. I picked the name CrepeCake because it ended up being not as thin as a crepe yet not as fluffy as a pancake, but the appearance was convincing enough to make you think it was. Oh, it tasted heavenly.

What I loved about this recipe is that it's done quickly and doesn't stick to the bottom of the pan, easy to flip (without little pieces flying everywhere or the circle being folded or split in half), not to mention how good it tasted.

Without further ado, I give you the best CrepeCakes you'll ever taste (no really - where else would you find a CrepeCake?)


2 cups all-purpose flour

1/2 tsp baking powder

2 tbsp brown sugar

1/2 tsp salt

2 cups milk

2 eggs

2 tbsp melted coconut oil (and a little more for greasing the pan)


1) In a mixing bowl, whisk the flour, baking powder, sugar and salt until combined.

2) Pour in the milk, eggs and oil, and mix until smooth (a few lumps are fine).

3) In a large pan, coat it with a little coconut oil and pour a little from the mixture, about the quantity of a ladle. Spread the mixture all around the pan and leave it for a few seconds.

4) When you see the edges cook a little (before the center gets cooked completely and you see the wet batter still there), carefully flip it and let set for another few seconds.

5) When done (they get cooked really quickly so keep a really close eye on them) stack them on a plate and drizzle with honey, cover with cream cheese and roll it up, or just plain by the hands - they will serve as the perfect Saturday breakfast!

I realize that it's a bit untraditional blog post for me, but this recipe was too good to be left unshared. Taking as little as 10-15 minutes, whip up these amazing CrepeCakes when you're craving something delicious, quick and breakfast-in-bed worthy.
